Traveling to Taiwan

My wife and I are headed on a round-the-world trip and will be in Taiwan in early December. I'd love to hear recommendations about where to go, what to see, and and what to do. We only have a few days but would like to hear what would be best to do. If Jeremy or others who have been there have recommendations we would love to hear what you think.

We are not yet FI but are willing to spend money on experiences. We would love to get a taste of the culture through food, art/architecture, and just walking around interesting areas. We are in our mid 30s and are fairly adventurous. What should we do?

Thanks in advance for any help you can give! We are going to book accommodations in the next week so please let us know what we should try.

If just a few days I assume you will only see Taipei

If we have out of town guests I usually bring people to:
- Taipei 101
- Longshan temple
- CKS - nice bridge and koi pond. The national theater and music hall are beautiful at night
- National Palace Museum to see the jade cabbage (kind boring, honestly, but it's a thing)

- hike Elephant Mountain (Xiang Shan) to watch the sunset over Xinyi neighborhood (Taipei 101)

with more time, Taroko Gorge is my favorite part of Taiwan
